Recipe of the Week: Mashed Potatoes w/ Caramelized Onions and Goat Cheese

I first experienced this amazing dish at a dinner party and it was so good I had to try it on my own later that week.

First off, I bought a potato ricer from whisk, one of my favorite local cooking emporiums. The ricer is a must-have in obtaining a fluffy, creamy and airy texture. I love a little chunk in mashed potatoes, however, the caramelized onions and crumbled goat cheese provide the perfect flavor and taste to forget about my mediocre mashed potatoes worldwide.

The level of difficulty for this recipe for the novice is easy.  The ricer and following directions are key.
